Here I have made it with chicken. You can make this with paneer or soy too.

Ingredients :
Onions chopped 20 gm
tomatoes chopped 30 gm
Butter/ghee 1 tbs
garam masala 1 tsp
Chicken or soy granules – 100 gm
mint chopped 2 tsp
fresh coriander chopped 2 tbs
spring onions chopped 2 tbs
salt to taste
Bell peppers – 6 slices
red cilli powder , coriander powder , Turmeric powder 1/4 tsp each
Ginger garlic paste 1 tsp
green chillies chopped a dash of them

Cheese grated 2 tbs

Method : 
Boil the soy granules / chicken with some salt and pepper , drain and keep aside
Take a pan with butter on medium flame
add the onions green chillies and ginger garlic paste .
cook for a while
add the spice powders and salt
cook further , then add the tomatoes and the greens and cook fora bit more . Add the soy /chicken and mix well cooking further. Add garam masala and switch off the flame .

Let it cool for a bit and fill the bell peppers with the filling , sprinkle some cheese over the bell pepper boast and bake them for 4-5 mins on 180 deg for the cheese to melt .

Serve piping hot with a dip of your choice .
