Aam Priyani ( No, it’s not an elaborate recipe)

We humans with an extra X have the ability to create wonders out of anything .

Leftover chicken tikka reborn as a lipsmacking “piryani”, cousin to the royal biryani . Served with raita, the way they make it in Almora, Uttrakhand, this i learnt from my bestie’s mom.

I always have people and memories associated with recipes and dishes. Stories with all the new successful cooking trails.
Right now I am full and a bit lazy ….. Recipe with complete macros in a bit

Ingredients :
chicken /paneer ( I took 100 gm of chicken tikka I had )
50 gm rice cooked and cooled
1 tsp ginger garlic
1 tsp garam masala
50 grams onions sliced thin
whole garam masala
salt to taste
1/4 tsp of shahi jeera
and the magic ingredient – raw mango grated 1 tbs
10 gm of ghee /butter
garnish – coriander and mint freshly chopped

Curd : 100 gm of curd
50 gm of cucumber grated
a dash of mustard ground coarsely
salt to taste
1 green chilli
a pinch of turmeric

Method :

Take a slightly big pan add ghee and whole spices and let them infuse the flavour . Add shahi jeera and ginger garlic paste , let the rawness go , then add the sliced onions, cook till the edges start becoming brown , add the grated raw mango and garam masala and cook on high flame for 2 mins . Add the cooked chicken /paneer tikka and mix it well with the masala . Finally add the cooked and cooled rice and toss them gently . Switch off the flame and cover the pan for just a bit . Garnish with fresh coriander .

Curds : cut the green chilli fine , add the grated cucumber , turmeric, salt ,mustard and chilli to the curds. Adjust the seasoning and garnish with fresh chopped coriander .

Serve the Piryani with raita .
